Recipe: Macaroni & Cheese with Tomatoes

This? Is my absolute favorite comfort food of all time. It’s so unbelieveably creamy & amazing & just hits the spot when you’re feeling the least bit down. My mom perfected this recipe, & I’m so glad to be sharing it with all of you amazing people! :)

What you’ll need:
1 16 oz package of the pasta of your choice – best with elbows, wheels, or bowties!
1/3 package of Velveeta cheese
About 1/2 cup of milk
2 cans whole peeled tomatoes
Large casserole

How to do it:
Preheat oven to 400°F

Make pasta according to package instructions.

While pasta is cooking, melt the cheese in the microwave (you can do this in the casserole to save dishes if you’d like!) in three minute intervals. Add the milk before you put it in; it’ll help keep the cheese from browning. You may need more milk; when it’s all done, the consistency should be quite liquid-y.

Open the cans of tomatoes; drain about half of the juice out. Cut the larger tomatoes in half – you’ll want to keep the juice from inside the tomatoes! Throw the tomatoes & juice in with the cheese.

Once the pasta is done, drain (but don’t rinse!!) & mix with cheese & tomatoes. Bake in oven about twenty minutes.

Enjoy! Leftovers are always amazing; it’s good for about four days in your fridge.
